Aunty Jane's Meatballs

These yummy little meatballs are easy to make. The maple glazed bacon compliments the other ingredients and adds that extra twist of yummy flavour.

Shallots - x 2 finely chopped

Maple Glazed Streaky Bacon - 2 rashers finely chopped

Lean beef mince- 500 grams

Garlic crushed- 1.5 teaspoons

Italian herbs- a generous sprinkle

Eggs- 2 medium sized, beaten

Tomato paste- 1 tablespoon

Amaranth puffs - at least 2/3 cup of. Use enough to make the mince into a moldable texture without being runny from the egg whites.

Rice bran oil- enough to shallow fry the meatballs

Mix all the ingredients in a large bowl until the mixture is sticking together and can be shaped into small balls. The amount of Amaranth puffs can determine how well the meatballs stay together, so you may need to add a little at a time until you have the right consistency.

Shallow fry the meatballs over a medium-low heat to allow the meatballs to cook through to the center.

#2 Clean From the Top Down!

Don’t fight gravity when you clean. Working from high to low is a simple way to make cleaning your home easier. Start cleaning from the top floor of your home down; to avoid having to track back over areas you have already cleaned. Remove cobwebs and dust from ceilings, cornices, light fittings and fans first, followed by window frames, furniture, skirting boards, and lastly floors. This way any dust shaken loose from something up high doesn’t settle back down on somewhere you have already cleaned!
